So browsing online (as per usual since I'm a self proclaimed internet addict), I came across the picture of this recipe. Looks awesome, right?! Thought I'd go find it and share it as I'm planning to give it a try!
"Ingredients:
1/2 cup (75g) whole almonds, chopped in half
1 cup (150g) dried figs, quartered
2 tbsp honey
1/2 tsp vanilla extract
1/2 tsp ground cinnamon,
plus 1/2 tsp extra
3 tbsp maple syrup
3 tbsp fresh orange juice (1/2 an orange)
3 tbsp olive oil
3 cups (255g) rolled oats
1/4 tsp sea salt
1/3 cup (45g) pepitas (pumpkin seeds)
1/4 cup (15g) shaved coconut
To serve:
Greek yoghurt
Strawberries, sliced
Blueberries
Honey
Milk
Method:
Preheat oven to 130˚C (265˚F) and line a baking tray with baking paper.
In a bowl, place the almonds, figs, honey, vanilla and 1/2 tsp cinnamon. Stir to combine.
Transfer to baking tray and bake for 15 minutes, or until golden and fragrant.
Remove from oven and set aside to cool.
In a saucepan, add the maple syrup, orange juice, olive oil and 1/2 tsp extra cinnamon
and heat over low-medium heat for 5 minutes, or until the mixture is thin and bubbling.
Transfer mixture to a large bowl. Add the oats and sea salt and stir to coat well.
Transfer to a lined baking tray and spread out across tray.
Bake for 1 hour, stirring every 15 minutes, until oats are golden brown.
In a large bowl, add the toasted oats, almond mixture, pepitas and coconut.
Toss to combine. Store in an airtight container.
To serve, place a few scoops of muesli in a bowl.
Top with yoghurt, strawberries, blueberries and a drizzle of honey.
Serve with milk on the side.
Makes about 6 serves"
